Bi Luo Chun — "green snail spring" — is picked as one bud with one leaf and rolled into tight downy spirals no bigger than a grain of rice. On the Dongting hills beside Lake Tai the tea bushes grow interplanted with apricot, plum and loquat trees, and the leaf takes up that orchard sweetness: a clean, brisk cup with a stone-fruit top note and no grassiness. Loose leaf. Brew at 80°C and pour the water first, then drop the leaves in — they are too fine to take a direct pour.

In Chinese this is written 碧螺春 and pronounced bì luó chūn.
