Whole dried butterfly pea blossoms that steep to an astonishing deep indigo — then turn violet and pink the moment you add lemon, which is the whole reason to own it. The taste itself is gentle and almost neutral: a faint sweet-pea greenness, no bitterness, no perfume. Caffeine-free. Grown in Yunnan and Guangxi rather than imported.
