Yu Garden Tea
The small white chrysanthemum of Tongxiang, dried whole so each flower opens again in the glass. The infusion is clear pale gold and tastes cleanly floral — honeysuckle and a hint of fresh hay, with a cool, faintly sweet finish and no bitterness when the water is just off the boil. Caffeine-free. Drunk on its own, or dropped into ripe pu-erh to make ju pu, the chrysanthemum pu-erh served in every Cantonese teahouse.
In Chinese this is written 杭白菊 and pronounced háng bái jú.
