Shou Mei from Fuding, the Fujian county where white tea comes from, left to age since 2010 — loose leaf rather than pressed, so it has breathed the whole time. Fifteen years turns the hay-and-melon of young white tea into something much darker: dried jujube, brown sugar, a little camphor, and a thick, almost soupy body that coats the mouth. Brews forgivingly and takes boiling water, unlike young white. Sold by the 100g here; the pressed cake version is 704.
