Honeysuckle buds picked before they open, from Fengqiu and Pingyi — the two counties that supply most of the country. The name means gold-and-silver flower, for the way the buds turn from white to yellow on the vine, and you can see both colours in the jar. The infusion is pale green-gold, lightly sweet and unmistakably honeysuckle, with a cool, clean finish. Caffeine-free. Best just under boiling, and very good iced.
In Chinese this is written 金银花 and pronounced jīn yín huā.
