One of China's ten famous teas, picked on the misted slopes of Huangshan as a bud with one leaf — slender, downy, faintly curved like a sparrow's tongue. The liquor is pale gold and unusually soft: orchid on the nose, sweet chestnut and a clean vegetal sweetness that arrives late and stays. There is no astringency to speak of if the water is kept off the boil. A quiet, elegant green for slow mornings and for anyone who finds Longjing too brisk.
